The Menu

Our Chef is driven by the hunt for fresh salsas made from scratch on a private villa near Puebla Mexico a few kilometers away. The birds are fusing the flavors of the valley. He places me at the bottom of the valley, which adds height to an already considerable challenge. How to mix those flavors and aromas to mix those colorful chilies into most demanding palate  in his specialty.

Chilies have become the condiment of choice for those of us who yearn for flavor that is beyond everyday cooking. Remember when our grandmothers made those fresh sauces and roasted the chiles on hand-cut fire wood? Well, we the millennium chefs are waiting for those same chilies and tomatoes to ripen each season. But we are turning those ingredients into incredible salsas!
